Gluten free Vegan - help!!!

I am breast feeding a gassy newborn and trying to eliminate things that might make him worse (& me gassy! I was eating chicken even though I usually don't eat meat but that is out.

Also wheat has been making me bloated & gassy as does dairy.

So now I am basically a gluten free vegan! Help what do I eat?

Quick meal ideas?
Snacks?
Take out?

I am hungry all the time!!!

I am going to participate in the whole foods challenge beginning June 3. You can see her post about it on Happy Herbivore here. Scroll down a little on her fb homepage, you'll see it.

I plan on lots of smoothies, salads including bean salads and some soups.

hummus and veggies? I have a friend who turns hummus into salad dressing by thinning it out and gets extra protein.

I'm vegan and gluten free. I can have eggs but don't eat them often as I'm just not 100% that they actually agree with me (I can also have fish but again, don't do it often). I absolutely cannot have dairy.

anything on her site is great though some are not gluten free. She does use soy so if you are avoiding look closely. Often she offers gluten free options and soy free options. Everything is vegan. Her desserts are awesome and so are her breakfasts. Her sweet potato chili is amazing.

This website is great, she lists allergy info on her recipe page so you can pick the recipes that work for you or alter them. I've been very happy with the recipes we've used.

For fast meals I usually do salads (just lettuce or spinach, olive oil, nutritional yeast, nori, hemp hearts and cherry tomatoes, avocado if I have it). I also like hummus and veggies, or seeds and dry fruit. I make steel cut oats in the crock pot over night too.

I hear you Mama! I became the same way after my last little one was born...about 4 months ago. I have been on the same journey and even though I have cut out gluten and diary, I am still having some issues However, I am learning all I can and trying to figure out some good snacks and meals too!...I think it's extra hard when nursing a babe...because we need more calories and my appetite is so much bigger when I am nursing!! In addition to the other sites that were mentioned...here is another one that I have found some great success with... www.glutenfreegoddes.com She has lots of info on there about going gluten free/diary free... etc.. etc... as well as lots of great recipes that we have made. And I definetely second the crockpot365 blog....love her easy crock recipes!! She has many with meat and diary...but many without too...and you can also sub out the diary ingredients for "non-diary" items. I hope you and your little guy find some relief!!

Lentil Soup and GF Crackers, Celery and Nut Butter, Hummus and Carrots. Those are some favorites in our house.

I have tried the baby cakes NYC chocolate chip cookies on the back of the Bob's Red Mill GF all purpose flour... amazing cookies!! Which recipe book do you have exactly?...is there only one baby cakes cookbook?

We have also been going this route! Wow, it's been tough!

We like the websites that have been listed above, and have also found http://fatfreevegan.com, which has a great vegan gluten free lasagna recipe which i modify slightly based on what i have at the house. But if you succeed in making a big lasagna, you can have leftovers for snacks.

Other snacks, we make is granola (using gluten free rolled oats from Bob's red mill), homemade applesauce, chips (especially tortilla), kale chips with cashew cheese.

And I have a couple of cookbooks that I borrowed from a friend that I might buy, that are mostly vegan and gluten free, but mostly for baking sweet things. I personally prefer the savory, but the recipes have pleased the rest of hte family.

Good luck! It is quite a journey and you realize that the dairy and the gluten is just pervasive! It is everywhere!!!

My kid is gluten free and lactose intolerant. He also gags on the texture of meat. :-/

Tonight for dinner I made polenta topped with vegan cheese shreds (though these have soy and I'm thinking of cutting it out too). Side of spinach sauteed with margerine and onions. Hubby and I also had chicken, kiddo had fruit.

Another meal I really enjoy is gluten-free pasta with green lentils, kale and caramelized onions. The key is to let the onions caramelize in lots of olive oil for at least 20 minutes.

For breakfast I usually make gluten-free oatmeal or an egg fried in olive oil, fruit on the side.
