Question Can you freeze zucchini?

And have it turn out well? I have it coming out my ears and want to freeze some, but have not done it before? Do you blanch or not? I am really wanting it to bake with later. Any advice?

Yes you can! It's only good to freeze if you are using it for baking; otherwise it's too soggy. I grate it into two cup amounts (the amount in my zucchini bread recipe) then put it in freezer bags. Thaw the day before.

You can shred it for zuchhini bread recipes. I've pre roasted it (until it starts to crisp a little brown) then frozen. Steam sauteeing it first it might freeze well.

Thank you for this! My dad sent me home with several gigantic zucchinis from his garden. I made two loaves of zucchini bread from one zucchini and still had leftover. I considered using it in a veggie quiche the next morning but ran out of time. Now I'll know I can just freeze it for the next time I make zucchini bread!
