Question QUICK!! CAn I freeze muffin batter?

Title says it all, I made more than I need without realizing, and want to know if I can put it in the freezer for another time. I'm going camping for 3 days and dont want them made, and I personally don't like muffins frozen, they are never the same.

I don't think so.

I would make the muffins and then freeze them. Not the batter. Just because I'm unsure. Have fun camping!

Re: QUICK!! CAn I freeze muffin batter?

According to a quick google you can freeze the batter in the muffin pan (I personally would use foil liners) pop them out and store them in a ziplock for up to 4 months. When you're ready to bake, let them thaw completely and then bake as per your recipe. I'm getting a bunch of blueberries tomorrow so I think I will freeze a batch for after baby comes just to see how it works.

I don't see why you can't. I know Swansons delivery company sells frozen muffin discs. You pop the frozen hockey pucks into the muffin pan and bake. If you have a silicone muffin pan, you could easily make the discs. Gives me an idea to do it because I do have a silicone muffin pan!

Yes. Though I would recommend using paper liners. Pop them in the oven frozen, and bake until they are done (you'll know by how they look). I did this at a cafe I worked in. You can do the same with banana bread in a metal loaf pan (though we always thawed those out before baking). And with scones we portioned them onto a parchment lined pan sprayed with cooking spray into the freezer and cooked them frozen too.
