I say either SEZ night-time inserts or a good hemp fitted and wool. I alternate between these two systems and both are bulletproof for my feed and pee all night DS!

I'd make sure you have enough absorbing power in the pocket.. but you can put wool or fleece over a pocket pretty easily. Ditto the SEZ inserts, they really are awesome!

I find prefolds more absorbant than lots of the fitteds I've tried, so I'd be pretty choosy about what fitteds you go with if you choose fitteds.. but wool is fantastic for keeping sheets dry
