We did baba ganoosh with rice chips yesterday. I also do a chickpea curry with jasmine rice. Both recipes take about 20 mins

We do pb&j(or honey) in a tortilla rolled up. With fruits, veggis and crackers on the side. Super easy and she loves it.

Well the "bunch of stuff on a plate" meal is easy to make vegetarian. I call it that, but its really just a meal with no real "main dish". So, a bag of grapes, some carrot sticks and ranch, cheese and crackers, pickles, etc all go in the lunch bag, no sandwich or wrap or main dish type item. Bento style lunches seem to be similar, for us we have no fancy bento style box so grapes are in a ziploc, sliced cukes in a repurposed butter tub, etc.

I used what I had on hand. So minced garlic, onion, cook until tender,I seasoned with curry powder, salt, clove,added two cans chick.peas w juice. Cooked until thick, then added chopped cilantro after taking off heat.
