Apple-Banana-Carrot Muffins
These are on the savory side- with no sugar, they definitely aren't overly sweet. I made them as mini muffins and it took about 18 minutes. You can add raisins or a little cinnamon-sugar topping to make them a little sweeter. Oh, and I used oatmeal instead of baby porridge.

We like the recipes at Chocolate covered Katie. She has a breakfast muffin that she suggests making ahead and freezing, they never make it that far here. It is like oatmeal you can make to take on the go. The boys love it.

we do it with cranberries.

Re: Healthy muffin recipes

No specific suggestions, but you can sub unsweetened applesauce 1:1 for oil in most baking recipes; the outcome will be heavier/moister but usually still very tasty. And often there is little side effect from some reduction in the amount of sugar called for.

Things sound good but that call for chocolate chips, try eyeballing the recipe to see if raisins or cranberries would make a good substitution. Or cut up apples, berries, etc.

Re: Healthy muffin recipes

I just made these:

And I added in coconut. Asking about healthy possibly implies no sugar, butter or AP flour, and this recipe has sugar and AP flour. I liked these so much that I am going to try to convert the sugar to honey, which in this recipe would just be a straight switch. I might add an extra tbs of flour though, and use 1/2 AP and 1/2 kamut or white wheat. If you don't mind sugar, oil and AP flour, I'd suggest you give these a try as they are, and change the recipe a bit if you like the taste of them.

Re: Healthy muffin recipes

All these suggestions look good, thank you.

Danielle, I have zero aversions to sugar, butter, etc I consider those to be part of baking and diet. We are reasonable eaters here so I don't feel a need to be militant about changing out everything. The "healthy" was largely in response to my husband's contribution immediately before asking. I'd asked him to look for a muffin recipe and he showed me a Chocolate Double Chocolate Chunk muffin. They looked like little lava cakes. I'm looking for a quick breakfast idea or mid-afternoon snack, not an anniversary dessert

Re: Healthy muffin recipes

These are the healthiest ones in my collection, Surprise muffins (whole wheat jam muffins):

They use whole wheat flour and wheat germ.

Re: Healthy muffin recipes

I've been craving these Blueberry Muffins, lately. Not "healthy", but a fruit muffin, not that death by chocolate your hubby suggested. These go FAST at my house:
