Changed Diet Habits, I need recipes & cooking help

I really dont have much of a clue when it comes to cooking vegan. I have to feed a very picky 26yr old, 5yr old, & 15mo old, plus myself.. Nearly everyone is picky & I need tasty but very healthy for everyone Vegan- ideas & recipes.

Please help, Im truely begging LOL...

Last night we had BBQ tofu- wasnt bad- but wouldnt want to live on it everyday KWIM? LOL

I just posted a mock tuna salad recipe in another thread here.

Oh and nursing shouldn't matter, it's probably healthier for you and baby anyways. I'm nursing and it hasn't made a difference. I am not vegan though, but cook a lot of vegan things. If you go 100% vegan, you will need a Vitamin B12 supplement though (at least from what I know).

I can't recommend getting a nice stash of cookbooks often enough. In the meantime, VeganChef.com and VegWeb.com have great, free recipes to try.

When you're ready to add books to your arsenal, please consider the following:

Yellow Rose Recipes
Vegan Cupcakes Take Over the World
Veganomicon
Vegan with a Vengeance
The Mediterranean Vegan Kitchen

All of these are available on Amazon.com, and I couldn't live without them. My copies have spatters, and stains, and rips on some of the pages because they are in use so often. Well, except for Yellow Rose Recipes because that book just came out a couple of weeks ago, but it is soon to be as dog-eared as the rest!

Good luck! With these books in your stash, you're sure to have GREAT dishes everyone will love.

The Uncheese Cookbook is awesome. It sounds really weird and the recipes look freaky, but they work. We're not vegan, but my dd is allergic to dairy, so we eat a lot of vegan dishes. I just made the manicotti out of there last night, and it was delicious.

Ratatouille Recipe (for eggplant

1 med eggplant (with skin) cut into cubes
2 small zucchini sliced
1 med green pepper chopped
1 med onion chopped
2 med tomatoes cut into fourths (you could even use a can of stewed tomatoes)
1/4 c olive oil
salt
pepper
1 clove garlic


Combine everything in a skillet and cook over med heat for 10-15 mins until veggies are tender.
Serve over pasta, couscous, quinoa, rice, or by itself!!

So easy and it will taste yummy. You can substitute veggies as you like depending w/ what's on sale, broccoli, snow peas, squash.. whatever. I might even add chickpeas or another bean in the final minutes of cooking for some fiber.
