Anyone ever make biscotti??

I'm trying my first ever biscotti, and I'll let you know how it goes, but anyone have any tried and true recipes that THEY'VE used.
I'm not a big anise fan, though, so I prefer almond, or vanilla...can you just substitute these for the anise?

I make this one several times a year


3 c sifted flour
1 c sugar
2 c almonds
tsp salt 2 tsp baking powder
tsp baking soda
1 tsp mace or nutmeg
2 tsp almond extract
3 eggs plus 1 yolk (save the extra white)

Roast almonds for 8 min at 350 F. Cool. Set oven to 375F.

Sift dry ingredients into large mixing bowl. In separate bowl, beat eggs and extra yolk until frothy. Beat in almond extract. Pour egg mixture in center of flour mix and stir slowly with a fork until mixed well. Add almonds. Knead dough with a little extra flour until dough is dry and compact. Shape dough into two loaves 12” long. Paint loaves with extra egg white. Bake for 25-30 min on a greased and floured baking sheet. Cool 1 hour. Cut into ” diagonal cookies using a serrated knife. Lay flat on a baking sheet and bake 10 min. Turn and bake 10 min on the other side. Let cool and store in an air-tight container. Serve with espresso or wine. For other variations sub other nuts, dried fruits or chocolate pieces for the almonds.

I've made it once - I'll have to look and see if I can find the recipe. It wasn't very difficult at all and very tasty!

Mmm... I should make it again... lol.
