Re: What do you do w/ leftover egg yolks?
Mushroom soup ideas:
Thaw chicken (leg quarters are fine) or pork chops, dump a can of cream of mushroom soup on it and cook it till the meat is done. Or, dump the can on the frozen meat and then thaw it all day in the fridge w/ the soup marinating it. Easy and yummy & smells great too.

so hollandaise sauce is made with eggs? and then your pour it over eggs? weird. I really like it, but I've never made it. I always thought it was a butter/lemon/cream sauce.

Re: What do you do w/ leftover egg yolks?
melt 1/3 c butter at low temp in pan, add two egg yolks, stir briskly so egg yolks cook but don't solidify. squeeze some lemon juice in. voila. If egg/butter separates, add a smidge of water and stir briskly, should fix the problem!

Re: What do you do w/ leftover egg yolks?
My mom made one of my all time favorite dinners when I was a kid with cream of mushroom. She would make meatballs, brown them on the stove, then put those together with potatoes and a little jar of of red pimiento into a dutch oven and pour a couple cans of cream of mushroom soup in, bake the whole thing until potatoes are done and it's hot and bubbly delicious. She would serve it over a couple slices of white bread on your plate. Dh said his family made the same thing but with ground beef instead of meatballs and over rice instead of bread.
