active dry yeast - packaets vs bulk

Ok - for the life of me - i can't find how much yeast to use to equal 1 packet. I bought the yeast in bulk and forgot to pick up the panphlet they have for all the measurments for their dry bulk goods

anyone know?

I was always told one tablespoon equals 1 packet of yeast. It has always worked for me. Good luck in your baking

Cooks Illustrated says a packet is supposed to be 2 1/4 tsp but that they are not filled accurately and need to be measured anyway.

I usually use about 2 1/2 tsp, sometimes 2 1/4 tsp.

i just went to the red star website - since packets are by volume - it's not completely accuret - but about 2 1/4 - 2 1/2 tsp
