Storing pancake batter??
How long do you think I can store pancake batter? I use a mix, so it doesn't have an milk or eggs added. I always end up with extra. I've used it the day after (but I always still have some).

I know that if it has actual eggs added it's still good for 12 hours, but using a mix I'd give it three days unless it starts to look/smell funky. The texture may go off before the batter actually turns.

I have not had the best of luck storing the batter, either mix or homemade. But, if you just make them all up, they freeze excellent. Then you can just microwave them or pop them in the toaster if you like them crispy.
