Diaper Swappers

I would like to make some homemade chili without any meat....just the beans, onions, pepper, tomatoes, spices, etc. Can I can this in a water bath like I do tomatoes, or would I have to use a pressure canner? Anyone have any experience with this.....HELP!

I would think it would be ok. I do sauce in a water canner and it has everything but the beans and meat in it. Have you googled it??

Yes, and most of what I've found is for chili con carne (with meat) and they require a pressure canner, which I don't want to mess with. I figured I can add meat right before serving if I want that.

Can you call the public health dept. and see if they have someone you can call for info about it??

Thanks for the link! I had contacted the local extension office and because I had put beans in it, she felt it needed to be pressure canned to be safe....so I just decided to freeze it instead!
