Vegan baking is a little tricky. You can't use any old pan, and you have to bake them at just the right temp, for just the right amount of time. Too long in the oven, even by 2 minutes & they'll be dry. Use a nonstick, coated muffin tin, and they'll be a bit tough. Too much sugar or moisture and they'll sink. It's got to be precise. Plus, sometimes it's just the recipe. Not saying that's the case here since I've never tried this one, but sometimes it's just the dang recipe. I had a vegan book that had cakes & stuff in it, and dang it if they weren't flat & rubbery every single time!

This is the only cake recipe we use - DS#1 is allergic to eggs, it was given to me by a co-worker a few years ago. It's the only chocolate cake her mom would make (I think it's kosher?) Anyway, it's a winner! We love, love it! Try it, if you haven't already!
