veg*n soup/casserole challenge (x-posted)
I really want to lose weight, but I don't have the energy to think about each meal, so I eat junk. I'm looking for recipes that have about 1800 calories or so for the entire batch (probably a soup or a casserole), so I can make it and just eat it throughout the day. This probably sounds weird to some people, but I'm stressed from a lot of things, being overweight included, and the stress it making me have NO energy for this, which in turn makes me more stressed. LOL
I need recipes that have no meat or dairy products, and that have as many of my daily requirements as possible (especially calcium, protein, iron). TIA!!

I don't know how many calories this has in it, but we make it a lot.
preheat oven to 375 mix 3/4 cup brown rice 3/4 cup red lentils 1 chopped onion 1 can diced tomatoes 4 cups veggie broth cover and put in oven for 1.5 hours stirring every half hour. sometimes we put in some green veggies or some veggie sausage too. Its yummy.

I made the chickpea and broccolli cassarole from Vegan with a Vengeance the other day and it was really easy and yummy...I am at work now so I don't have the recipe but it might work for you!

So you are going to eat one dish the entire day? That will not be giving your body the wide variety of nurtrients it needs, no matter how healthy the dish.

The lady teaching the class in Alaska gave out this recipe last week of her own making, it is not soup/casserole but is to die for!!! I'm not vegan but I prefer the quesadillias made with this spread over the the cheesy ones. Varry what you dip them in and you can get the right amount of calories cheesy beany spread by Delisa Renideo 1 can white beans, drained and rinsed (or 2 cups cooked white beans) 1 tbl tahini (optional, I left out, makes it creamier) 1-2 tbl roasted red pepper, in water (enough for cheesy color) 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp prepared mustard 1/2 tsp salt (only if NOT using canned) 1 1/2 tbl lemon juice dash of liquid smoke combine in food processor (NOTE: or blender, I used a blender and it worked fine) and mix thoroughly until creamy great on chips, veggies, instead of cheese in quesadillias
