What about crackers and cheese he can put together himself, edemame is good and fun to eat with your fingers, hummus and chips or pita, craisins and raisins, cereal bars can be good, too

When my toddler went through that phase, I would make her foods that she could feed herself. And its amazing the foods that they will eat if you make them look interesting enough!! My DD's favorite was 'the forest.' I just slathered some peanut butter on a small plate for the 'dirt,' stood some broccoli up in the pb for the 'trees,' and put some cheese cubes around for the 'rocks.' Another thing she really liked was those mini muffin tins that hold 6 muffins. I would put a different food in each cup, like brown rice, chicken bits, whole wheat pasta, avacado, apple...

Dips are awsome. Tahini, hummus a healthy salad dressind and cut up veggies fruits and breads, crackers. Steam the hardstuff if you are worried about choking. A great trick is to fill an ice cube tray with little snacks such as cherrios, cut up fruits, veggies, cheese, cubed tofu,.....and leave it on the table so you little one can go to it and snack whenever they want.

Will he eat spaghetti?

you can use your blender to puree things like zuchinni, mushrooms and carrots, and just add that to your spaghetti sauce. Then he never knows he got into it.

If he eats things like Banana bread, you can also put in carrots or zuchinni with the same recipe, just leave the banana out.

I dice banana slices and tofu dogs into quarters for DD. She also likes edamame. At first with the edamame, I would slip the skin off them because it sorta confused her when she put it in her mouth. Now though, she eats it just fine by herself.

if he wants something sweet make banana bread w/o oil use applesauce and load it up with grated carrots, zuchini (sp)
use wole grain pasta with the mac and chese, i add grated carrots to mine for my step kids kids. slice peices of broiled chicken and cool it a little then give him ranch or ketchup let him dip and make a mess
