I've never heard of the soda thing, but Mom always replaced eggs with applesauce when we were growing up! She'd just dump in a small container or two.

DD is allergic to egg, so I substitute with applesauce.

I used this for DD's birthday cake: 1 tsp baking powder, 1 tblsp liquid, 1 tblsp vinegar. The recipe called for three eggs, so I doubled this.

There are also these substitutions (I haven't tried these yet) -

For each egg substitute one of the following in recipes:

1 1/2 tblsp water, 1 1/2 tblsp oil, 1 tsp baking powder

1 tsp yeast dissolved in 1/4 cup warm water

1 tblsp of apricot puree

1 packet plain gelatin, 2 tblsp warm water. Do not mix until ready to use.

Another option as someone mentioned is ground flax seed. 3 TBS. ground flax & 1 TBS water= 1 egg replacement. Good way to get your Omega 3's! I use this alot in many recipies & it has worked out great for us!

hey i'm glad I wandered in here! I'm going to try the diet soda cake. I figured the only answer would be EggBeaters! Who knew there were so many egg substitutes

Ok, I made the box mix by the directions. It called for 3 eggs. I replaced 1 egg with 1/4 cup of unsweetened applesauce. This was a compromise. I am allergic to eggs, but generally don't react when used in recipes. I usually only react to just straight up egg (scrambled, etc.) DH did not want me to use the applesauce. The cake turned out great, and DH said I could try substituting all 3 eggs next time!!!

On another note, I had the hardest time finding applesauce without high fructose corn syrup. (I have a corn allergy, too) Great Value Unsweetened (Walmart brand) was the only one without hfcs. We tasted the applesauce and we both wondered why it needed sweetened. It was not sour at all. And, it came in a glass jar - another good thing!!
