I'm a great cook...but only a so-so baker!
Hubby wants a coconut cake for Thanksgiving. Anyone have a recipe using boxed cake mix? My "from scratch" cakes always turn out

I don't have a recipe, but could you just make a white cake (boxed) and use a premade white or cream cheese frosting and then add the coconut flakes to the top? Maybe mix 1/4 cup or so of coconut into the cake mix to give it a better flavor.

Well, I don't know about coconut cake. But I can give you a quick 10 minute coconut "ice cream" recipe that tastes like biting into a real coconut. And if you add a little rum it could be a pina colada ice cream.
