gingerbread cookies

i told the girls that while dd1 is on winter break we would make gingerbread people. does anyone have a tried and true gingerbread cookie recipe that they would like to share? TIA

We've been making this recipe since 1972

1 cup margarine
1 1/2 cup sugar
1 egg
4 tsp grated orange peel
2 tblsp dark corn syrup
3 cups sifted flour
2 tsp baking soda
2 tsp ground cinnamon
1 tsp ground gigner
1/2 tsp ground cloves
1/2 tsp salt

Cream margarine and sugar. Add egg and beat well. Add orange peel and corn syrup. Sift all dry ingredients and into creamed mixture and mix well. Chill, then roll on a floured surface to 1/4" thickness. Place aprox 1" apart on ungreased cookie sheets and bake 375 for 8-10 minutes. Cool for 1 minute and remove from pan and cool on rack.

Sorry got sidetracked. Here we are, this is the recipie my family uses every year.

Danish Gingerbread

1 cup butter
2/3 cup brown sugar
1/3 cup light corn syrup
2/3 cup honey
1 tsp grated lemon rind
1 tsp vanilla
1 tsp ground ginger
1/2 tsp ground cloves
1 tsp ground cinnamon
1 tsp salt
1 tsp baking soda
4 1/2 cups sifted flour
decorating icing

Cream butter and sugar. Add syrup, honey, lemon rind and vanilla, spices, salt and soda. Add enough flour to make a soft dough. Chill until firm enough to roll. Set oven at 350o. Grease and flour baking sheets. On a floured cloth, roll dough 1/8 inch thick. Cut into desired shapes with cooky cutters. Bake on prepared sheets for 8 minutes or until puffed and dry. Do not overbake. Thicker cookies baked for less time makes softer cookies. Thinner cookies baked longer makes crisp cookies. Cool cookies on rack.
Decorate with Decorating Icing. Good with tea or coffee.

Decorating Icing

1 1/2 cups sifter confectioners’ sugar
1 egg white
1 tsp lemon juice
few drops vanilla
food colorings

Beat sugar, egg white, lemon juice and vanilla together until mixture stands in peaks. If necessary, add a little more sugar or egg white. Cover with a damp cloth when not being used. Divide icing into separate bowls and color. Use frosting decorating tips to decorate cookies. Frosting will dry hard. After frosting is dry, store cookies in airtight container or freeze.
