IME red lentils cook to mush--they make great soup but I don't know that they'd hold up with rice. But I've never had them mixed with green lentils.

what kind of "red"? split red turkish that are salmon colored? Those cook much like split peas and probably wouldn't work. green should though.

Lentils are very flavorful on their own... just your regular seasonings to taste is all you need... they're very popular in vegetarian cuisine, Indian, Ethiopian and Jamaican and all of these cuisines have a large population of vegetarians so pork is definately not needed. I like to put some seaweed in when I cook most beans, it's a very flavorful alternative to flavoring foods with meat.
