Tanzanian beans w/ coconut and cilantro/coriander. Yum!
Last night I made a dish out of a cookbook I just bought, 'The World in Your Kitchen: Vegetarian Recipes from Africa, Asia, and Latin America...' It was easy, delicious, and one of our new favorites. DH LOVED it. I was out of a couple of the herbs/spices, but it was still totally flavorful, and we don't like bland food; maybe it would have even been too much with all the herbs added? Thought I'd share:
Tanzanian beans w/ coconut and cilantro/coriander Ingredients (I doubled this recipe and the two of us polished it off): 3 cloves garlic, crushed 1 green chili, finely chopped or 1 tsp chili powder (I used powder) 1 Tbsp ground cumin 1 Tbsp ground coriander (I was out of this) 2 teaspoons turmeric (I was out of this) 1 Tbsp fresh cilantro/coriander leaves, chopped (I used cilantro- important ingredient) 1 cup dried coconut (I bought it in bulk- not the big shaved pieces, but the medium/finer powdery stuff) 1 cup pinto, rosecoco, or black-eyed peas (I used black-eyed peas) 1 cup diced and parboiled potatoes lime or lemon juice to taste (I used lime) 2 Tbsp oil (I used olive) salt (I used sea salt) 1. Heat oil and sizzle garlic and chili or chili powder for 30 seconds. 2. Add cumin, oriander, turmeric, and the cilantro/coriander leaves. Cook for a minute or two, stirring them to blend. Add the dried coconut and mix in. 3. Add the cooked beans and potatoes; season and pour the lime or lemon juice over. Cook until well blended and serve w/ green vegetables.

I love that cookbook, too. Another really great one is Madhur Jaffrey's World Vegetarian.
