Need a Healthy Potato soup recipe

As a rule we do not eat potatoes, not are favorite starch. But i have half a bag left over from Christmas that i would like to use up. What can i add to Potato soup to make it more a full meal and/or healthier ingredients

here's how I do potato soup.

Potato Kale soup

8 cups water
6-7 potatoes (I prefer yukon gold, but russet work), peeled and diced
2 crowns broccoli, cut and floretted
1 bunch lacinato (or "dino") kale, chopped in 2-in pieces
1 tsp onion powder
1 tsp oregano
3/4 tsp garlic powder
1/2 tsp celery flakes or ground celery seed
celtic sea salt to taste (we use probablyu 2ish tsp)

Combine ingredients and simmer until potatoes are tender. Stir occasionally to keep potatoes from sticking to bottom. In crock pot, 3-4 hours.

option: put in 1/2 cup of corn flour and 1/4 cup nutritional yeast flakes to make it "cheesy".

this is what I do. my son does not like to eat cooked veggies but will eat raw like crazy!! strange!! so for potato soup i cook potatos, carrots, peas, corn cauliflower etc(whatever you l ike) and then I quickly blend i all up. and add a bit of salt and pepper and let it simmer until we eat. its a nice cream soap withouth big chunks of veggies. I think Knorr also makes one like this which is where I got the idea . my family loves this!!!

If you eat meat you can add diced ham or ground italian sausage to make it heartier, if you don't eat meat there are a veggie italian sausages out there that are good, serve with a fresh salad and some crusty french bread or corn muffins.

Depends on what you consider healthy

I make a really simple creamy potato with rosemary soup. We have a giant rosemary shrub outside and almost always have potatoes and extra whole (raw) milk on hand, so we have it often.

It is based on this recipe from allrecipes.com. I especially like it with the crumbled bacon on top (nitrate and msg free, of course!). I also like to sub leeks for the onions when I have them.

Most soups are very flexible recipes so once you've made this or another a few times you can make subs with what you have on hand. YUM!
