Bread making question

I usually just make my bread all in my machine . This time , I want to try to put it in the machine just for the dough and bake it in the oven to make to smaller loaves . I hope this works . Now I'm looking at different recipes and some do not specify what kind of flour to use . I have very little bread flour left , I have wheat and white flour . Can I substitute ? And what's the difference ? I also don't like my breads very dense , I like a fluffy loaf ! Thank you !

when you like it fluffy don't let it stand more than 8 hours (approx) and do not stir it to much, when you put it in the hot pot. Otherwise you plopp all the bubble that are in the dough already.

Flour: it does not really matter which flour you use. I always use about 70% white flour (not special bread flour) and the rest is a mix from whole wheat, flax seed...
