Leftover Roast....

I was hoping to make a beef stew out of leftover roast, carrots and potatoes from last night. Anyone know how to do that? I do it a lot with chicken but aren't beef stews/soups based with not only beef broth but with tomato as well? I don't think I have any tomato juice.

You could use a can or two of beef broth plus a 8oz can of tomato sauce or even tomato soup for the base, then just add the other ingredients and simmer.

Another good recipe if you like mexican food is to layer shredded beef with shredded tortillas, mexican diced tomatoes, cannoli (or black) beans and cheese to make a mexican style lasagna.

i do this w/o tomato just add 1 pkg lipton dry soup mix to the roast broth then thicken w/ flour or corn starch disolved in cold water then add veggies and simmer....

I don't have a good stew recipe but just wanted to share that we always plan on shredded bbq beef sandwiches the day after we eat a roast. SO simple and yummy!

I usually make beef barley soup or french dip sandwiches with leftover roast beef. Yum!

I'd saute 2-3 oniond and some diced celery and a canof corn and or green beans and forget the tomatoe.. A can of condensed creamof mushroom soup and some soy sauce is a good substitute for broth.
