Re: ~$5 Meal Ideas~

this may be a repost, I didn't make it all the way through!
my mom used to make this version of a shepard's pie alot growing up, fast easy and cheap!
1lb ground beef or turkey
1 can green beans
1 can tomato soup
mashed potatoes prepared according to package directions for 4-6 servings (or make homemade for even better mashed potato goodness)

preheat oven to 350
brown and season meat to taste with salt and pepper,
add meat to 9x9 or other casserole,
add green beans (drained),
pour tomato soup over green beans and meat,
top with prepared mashed potatoes
bake until mashed potatoes are lightly browned and sauce is bubbly

Re: ~$5 Meal Ideas~

I think I've only gotten through the first 14 pages but these are great...

Our family version of SOS is:

carl buddig beef (2 packets) cut up into pieces then browned up in a bit of butter or margarine. Add some flour to make a roux then fill up saute pan with milk. Stir until thickened (add s&p) and then pour over toast.
-----------------------------------------------
"Garbage"...

Cook up elbow noodles and mix in with cooked ground meat, canned diced tomatoes, small can of tomato sauce and italian spices.
----------------------------------------------
Also, another favorite from when I was a kid is Cottage cheese and shells.

Cook up pasta shells and add in a tub of cottage cheese. Put into buttered casserole dish and add a few dabs of butter (or margarine) and bake until cheese is melted and bubbly. Add s&p. Yummy!
-----------------------------------------------
Another one is a tuna melt...

Make up tuna salad (canned tuna, mayo, celery, onion etc) and dollop on top of a slice of buttered toast then top with tomato slice and a bit of grated parmesan cheese. Put under broiler to heat through.
------------------------------------------------
Cream cheese sandwiches...

Toast bread and butter. Top one with a good amount of cream cheese and make a sandwich. Sounds weird but it really is great! My little picky daughter actually just took this to school for lunch the other day and she loved it! Serve with soup or salad for a complete meal!
-----------------------------------------------
and finally a way to use up some cooked chicken (if boned take off the bone)... Hot Rosemary Chicken Salad Sandwiches

Dice leftover chicken and heat up with a smidgen of water to moisten. Add in some chopped celery and mix in mayo and mustard (I use dijon). Add a bit of crushed rosemary and s&p and serve on bread.

Now...I'm off to copy some of all of your recipies! Thank you!

snagged this idea from another forum....

baked potato bar for dinner [peirce potatoes and wet a little. rub with kosher/sea salt and wrap w/aluminum foil. bake till done and set out bowls with toppings. self serve!]

taco bar. prepare taco meat and scoop into shells. serve toppings in bowls.

also u could do a nacho bar

yummy, cheap, easy!

I made this tonight and it was a big hit! It's wonderful on a cold night...there was a bunch left over, so my dh is taking for lunch tomorrow He doesn't usually like leftovers, but he liked this. So easy to make, and even my 18 month old liked it! Adding to my recipe collection, definitely.

Re: ~$5 Meal Ideas~

I don't know if anyone posted something like this, but a friend of mine came up with this and it's wonderful. It's basically everything in a burrito, but put in a casserole dish & baked. It may be a little over $5, but it depends on how much cheese you use.

Taco Bake
Pound of ground Beef/Turkey
Taco Seasoning
Mexican Rice (I used the Rice a Roni version)
shredded cheddar cheese
2 soft tortillas

Prepare rice. While it's simmering, prepare meat.
Brown beef or turkey & stir in taco seasoning with water (read instructions on taco packet for exact amount of water).
Cut tortillas in little squares
In an 8x8 casserole dish, layer rice, then meat, then sprinkle some shredded cheddar cheese on it. Then, put some of the tortilla on top. Do again: rice, meat, cheese, tortilla. Add a little more cheese on top if you wish. Bake at 350 for 15 minutes. Yummy!

Re: ~$5 Meal Ideas~

I finally have a recipe to add!!!

Mandarin Pork and Wild Rice

20 oz. boneless pork loin chops, cut into strips (any cheap boneless pork will do) $2.37
1/4 tsp. pepper
1/8 tsp. salt
1 Tbsp. canola oil
1 can (11 oz.) mandarin oranges $1.15
1-1/2 cups of water
1 pkg. (6.2 oz) fast-cooking long grain and wild rice mix $1.29
1/4 cup thinly sliced green onions $0.69

1. Sprinkle pork with pepper and salt. In a large skillet, brown pork in oil. Meanwhile, drain oranges, reserving juice; set oranges aside.
2. Add water, rice mix with contents of seasoning packet, onions and reserved juice to skillet. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until pork juices run clear and liquid is absorbed. Stir in oranges and heat through.

Makes 4 servings. 274 calories per serving.

$5.50!!!! And it is soooooo good!

Disclaimer: I got this recipe from a Taste of Home recipe card. Originally submitted by Melanie Gable of Roseville, MI.
