Exclamation Fish / Seafood ?

I am trying to eat more fish, which is really hard in such an isolated small town with no fish counter..... but I was wondering your favorite ways to prepare fish, even using canned fish... the only thing I am pretty good at making is Salmon, but I'm looking to branch out.
Anyone?

My fave is salmon Burgers. I use canned salmon, crushing the bones into the meat mixture. It is so yummy. Here is some recipes using canned salmon - welovefish.com/canned.htm

I like flounder, cod, or haddock with breadcrumbs, butter, and alittle lemon. Or a fish chowder. I also LOVE clam chowder, Rachel ray has a quick one that uses canned clams. Also, canned clams w/cream cheese (soften the cream cheese, add alittle of the canned clams juice and then the clams) its an awesome dip w/chips or crackers.

I do most of my fish cooking from frozen. I also started with Salmon. lol

I usually do my fish in the microwave without thawing it. For Tilapia I put it in the baking dish then dump italian dressing over it and then top with parm cheese. Then I microwave for about 10 minutes. Yummo!!
