easy pizza dough
it's cold & gloomy. we want pizza w/ going anywhere & w/o ordering out.
please help. i have yeast & flour & i plenty of toppings.

This sounds really easy, so I am going to try. But, why is the amount for flour so varied? How will I know when I have the "right" amount?

Flour amounts depend on how sticky you like the dough and how humid it is. I usually use 2.25 cups. I should just change the recipe to say that, don't know why I haven't yet.

Oh and FYI 1 tbsp yeast is the equivalent of 1 packet of yeast.

Ultra-Quick All-Purpose Yeast Dough
3 1/2 cups all-purpose flour 1 Tbsp quick rise dry yeast (or 1 envelope) 1 tsp salt 1 cup hot water 2 Tbsp oil In a large bowl,stir together 2 cups of the flour,the yeast and the salt.Add the hot water and oil,and stir until the mixture is smooth (it will be sticky and gooey-don't worry).Now add the rest of the flour,1/2 cup at a time,stirring it with a spoon until it becomes hard to stir. At this point dump about 1/2 cup flour on the counter and then turn the sticky lump of dough out onto it.Begin kneading the dough,continuing to add only as much flour as you need to keep it from sticking to the counter or your hands.Knead until the dough is smooth and elastic.(it will feel like your earlobe-really). Place the dough in a large oiled bowl.Then cover and let rise in a warmish place.It could take anywhere from 20-40 minutes,depending on complex cosmic factors.Be patient. When the dough has doubled,punch it down to deflate it,then knead a few times.Let rest for 5 minutes and use to make pizza or focaccia. Makes enough dough for 2 12inch pizzas or 2 pans of focaccia.

I just punched the pizza dough that is rissing down.
Here is what you need: 1 cup of hot water 1 teaspoon salt 2 table spoons honey 1 table spoon active dry yeast 1/2 cup of olive oil 3 1/2 cups of flour of your choice italian spices You heat the water so it is hot to the touch but not too hot. Then you add the salt and honey, stir, then add the yeast, stir again ans let sit for 10 to 20 minutes. When you check make sure the yeast started to work (bubbely on the surface), then add the olive oil, the spices and one cup of flour. Stir well. Then add the rest of the flower and kneed it realy good while adding the flour half a cup at a time. Leave it in a bowl with a wet towel covering the bowl. It should stand in a warm room. Then after an hour give it a realy good punch and let it rise for at least another hour. VERY yummy. This dough also makes great focation type of flat bread or pizza rolls filled with cheese or all sort of things. |
