This is really easy and yummy. Even my DH, who usually wouldn't touch cabbage, asks me to make it.
Red Cabbage & Chicken Sausage Heat evoo in skillet over med heat, add a few tbsp sugar and cook until dark brown. Carefully (sugar will be super hot) add 1/2 med diced yellow onion, cook 5-10 minutes until well browned. Add a couple chopped cloves garlic and cook 2 min. Deglaze with a few tbsp red wine vinegar, then add juice of ½ lemon, fresh ground black pepper, and any herbs & spices to taste, and thinly sliced cabbage (I use half a small head of cabbage, but just eye it). Slice 2-4 (depending how much you want) spicy chicken sausages into ¼” slices and add to skillet, then cover and cook until cabbage is tender.

This is what we had for dinner tonight. Sooooo yummy!
Lentils and Rice 3 - 4 T olive oil 1 large or 2 med onions, sliced thinly 3 cloves garlic, minced (or I grate mine like RR) salt and pepper 1 T tomato paste 1/4 - 1/2 tsp red pepper flakes 2 tsp cumin 5 1/2 C water or chicken broth (I used some of both) 1 C dried lentils 1 C rice 1 tsp apple cider vinegar or lemon juice In dutch oven, heat olive oil and add onions, salt and pepper. Cook onions until slightly golden, then add garlic. Cook a minute or two, then add the tomato paste and crushed red pepper. Cook an additional minute or so, just to allow the tomato paste to lose it's bitterness. Add 1 tsp of the cumin, the water, and lentils. Let cook about 15 minutes, then add the rice. Let simmer 20-30 minutes, until rice is tender. Take off heat, add the remaining 1 tsp cumin and the apple cider vinegar. Yum!!
