I use ground sausage in my lasagna. Dh goes nuts for it.

If it is a solid sausage, I make a casserole where I slice up potatoes into chunks, slice sausage into chunks, mix together and cover in a simple white sauce. Then I bake it till the potatoes are soft, about 45min at 350. It is so so so yummy. It works great with smoked sausage too.

That reminds me... another great one involves potatoes, kale, and cheese.

Slice the sausage into coins and brown. Once browned, remove and saute' the kale in the drippings. Heat oven to 350*F. Slice up some potatoes and layer them in the bottom of a casserole dish with pats of butter. Top with kale, then sausage coins, then shredded cheddar cheese. Bake covered with foil for 30-45 minutes (depends on how thickly you sliced the potatoes; parboiling first can help reduce overall time). Very yummy!
