Recipes that have "hidden" veggies?

My two year old won't touch a vegetable to save her life. However, I've notices that if veggies are "hidden" she'll eat them. For example, I make a tofu and spinach stuffed shells from LLL's cookbook that she likes. Anyone else have simple, easy recipes that aren't labor intensive that have "hidden" veggies?

pick up Deceptively Delicious by Jessica Seinfeld from the library. Most of the stuff sounds good, and you just puree the vegetables to add them. Some of the veggies you don't even have to cook first. I haven't tried any of the recipes yet, but I read the book yesterday and they sound pretty yummy and easy and some are toddler friendly.

I hide veggies in my marinara sauce and chili. Muffins are always good choices around here, too.

I hide mine in my slow-cooker meatloaf (I have a horribly picky DH). I can look up the recipe if you are interested.

Cottage/shephard's pie - has mashed potato ontop of a ground beef gravy type mix, I hide the veges in there

Zucchini bread, I add carrots to it too

A macaroni type casserole, hide cauliflower in there

I luckily don't have any trouble w/ my one year old, this gets the veges into DH!

Slow-Cooker Meatloaf

3/4c ketchup (you can use spicy ketchup if you prefer)
1 1/2lbs ground beef
3/4c bread crumbs (I like seasoned but you can use regular too)(if you use panko, it will be very dry so you will need to add more ketchup)
1/2 c finely chopped onion
1/2c-1c finely chopped or grated veggies
1/4c grated parmesan
1 egg
1 1/2 tbsp worcestershire sauce
2 tsp minced garlic
1 tsp salt
1/2 tsp pepper

-Fold 2 pieces of foil into an + and place in slow cooker to line it
-Mix 1/2c of ketchup with all other ingredients into a bowl. Mix well and shape into a 7x4x2 inch loaf. Place in center of slow cooker (make sure the loaf doesn't touch the edges. Spread remaining ketchup on top and sides of loaf.
-Cover and cook on low 8 hours or high for 4 hours.

This is the only meatloaf my DH will eat. He is so picky. I usually break the recipe down to use only a pound of ground beef since we are a small family. The finely chopped or grated veggies, I usually use carrots, celery, and/or broccoli. I use whatever we have as leftovers or needs to be used up. I usually grate them with my fine cheese grater. You could also use green peppers but I dont because I don't like them. The veggies will change the color of the the meatloaf, mine is usually kind of orange since I put a ton of carrots into it.
