I get dried garbanzo beans, boil them up in my stock pot, make as many blenderfulls of hummus I can (I fill the blender about 3/4 with the beans, add a few tbs of olive oil, squirt of lemon or lime juice, a pinch of salt and whatever else I want -- olives or red pepper are the current faves), then freeze what we won't eat right away. We don't do tahini so the baby can eat it, but you could add that for flavor too.

I've also done black bean soup in the crock pot -- after beans have been soaked I put them in the pot, cover with water, add a can of tomatoes with chiles and some bacon pieces and simmer it until it's soup.
