Question about vegetable stock

I was at the store the other day and they had a good deal on vegetable stock but it was in the paper type cartons with the plastic pour lids. You had to buy 2 cartons to cash in and even though I have a good sized family I only use vegetable stock sporatically. My question(s) are: Can these be frozen? The expiration date on the carton says August 2010, does that mean after it's been opened and refridgerated or only before it's been opened?

Re: Question about vegetable stock

It means in General it will go bad.
My suggestion is to keep it in the cupboard until your ready to use it and If it doesn't get used by the end of the year YUP freeze it. I pour mine into ice trays freeze em up, then transfer them into a big plastic bag MARKED chicken, beef and Veggie stock Cubes. then I just pull out however many I need. Sometimes I am only cooking for me But why have BLAND food when I can pull out some GOOD stock from the freezer.
