ISO: healthier recipe for 1st birthday cake

I love the idea of letting your 1 year old tear into a cake, but I shudder at the thought of dd ingesting animal fat and tons of sugar. I have heard of other mamas making a cake with yogurt..
Does anyone have a recipe or ideas?

Re: ISO: healthier recipe for 1st birthday cake

A friend found a recipe for a homemade carrot cake in the Super Baby Food book. I wish I could remember exactly what was in it but I know we were concerned about some allergens (there weren't any kind of nuts), I think they used juice as a sweetener. The frosting was just plain cream cheese mixed with some juice.

Good luck!

Re: ISO: healthier recipe for 1st birthday cake

I made up a recipe for my dd's first birthday cake because I couldn't find anything else that I would let her eat. From my memory it had carrot, zuchinni, applesauce, yogurt, eggs, whole wheat pastry flour, olive oil, baking powder, nutmeg, and a couple of pureed prunes for the sweetner. Then we topped it with plain cream cheese that I tinted purple with a couple of blueberries. If you are interested I could try to find the recipe.

Great ideas. Thanks, mamas. I feel so much better letting dd eat carrot cake w/ cream cheese.

probably not what you're looking for, but we just made an angel food cake without icing--it was great!

A friend of mine used a whole banana "frosted" with plain yogurt, with bite-sized banana pieces around the outside. Then she stuck a candle in it. It was really cute!!

Re: ISO: healthier recipe for 1st birthday cake

We went to an italian or portuguese (I can't remember which) bakery and ordered a fruit cake which is just white cake with a layer of strawberries and peaches between the layers of cake- and whipped cream frosting. The whole thing is very un-sweet (must be very little sugar) and the fruit makes it a little healthier. It was a hit with everyone at the party- kids and grown ups.

For his second bday I am doing the carrot cake and cream cheese frosting.

Hey, mama! I made E an organic white cake, you can use a simple recipe substituting all good stuff, with homemade, very lightly sweetened whipped cream and strawberries. The kids eat it up, and it is healthy! It was a big hit at the party.
