Yumm... pregnant woman is very hungry now, lol. It's only 8am. I think I'm a little late to this... but here's mine. Didn't read all the posts so I hope it's not a repeat.
Chicken Enchilada Casserole... close to $5 at least 2chicken breasts 1/2 onion celery (i'm really bad at measureing, maybe 1c) 1can corn can of chicken broth (optional) 1/2c salsa (more/less to taste) chedder cheese 1pkg corn bread mix 1small can green chilis 1tbsp (aprx) cornstarch dice chicken Boil chicken in can of broth (I usually just use a couple cups of water w/salt, pepper, garlic or whatever spices i feel like or use leftover chicken) After a couple of min add onion and celery to pot Once chicken is cooked reduce to simmer add corn & salsa mix cornstarch w/cold water so there are no clumps and add to pot. Allow to thicken some. Pour everything into baking dish top with cheese, then green chilis, then corn bread bake according to corn bread directions. SOooooo yummy, i just hope that I remembered everything for the recipe. another favorite mac n cheese w/left over chicken breast and peas... love it with the alfredo mac n cheese or spaghetti with alfredo sauce too... we use wildtree's powdered kind and its pretty cheap because i don't use as much as it calls for and its not near as rich as the jars. this stuff is the only thing i can get my 17month old to eat half the time that's semi healthy Everything else i can think of has been posted already. |

Wow! Wonderful thread and great ideas ladies. here is a super cheap dessert, very yummy too boot
![]() Peach Cobbler 6-8 Fresh peaches (peeled or unpeeled) 1 box yellow cake mix 1/2 cup melted butter 1/2 cup chopped pecans (I never add these) 2 Tbsp cinnamon/sugar mix Spread cut up peaches evenly in bottom of 13x9 inch pan. Sprinkle with dry cake mix completely covering fruit. Pour melted butter over entire cobbler. Sprinkle top with chopped pecans and cinnamon and sugar. Bake at 375 degrees for 30-40 minutes. I usually let the cut up peaches soak a minute in some cinnamon and sugar before spreading them on the bottom of the pan. But you don't have to it is great either way!! |

Chicken Pesto Pasta
Boil some egg noodles, set aside Boil 2 chicken breasts, shred Combine noodles, chicken, add pesto sauce Very easy and great cold or hot! |

I do this but add a can of diced tomatoes and then sprinkle on some Parmesan cheese after it's been dished up! It is so yummy! It's one of the dishes I make if I have a play date here and the mom and kids stay for lunch. The kids might not like it, but it's nice dish for the mom and myself to eat. It's not really a $5 meal for us as the pesto is about $5 at my grocery store. I should see if I can find it cheaper somewhere.

I'm from Edmonton where out of season fresh vegies are super expensive. Here is a traditional Dutch recipe we ate once a week when I was growing up:
Hutspot 5-6 big potatoes peeled and chopped 5-6 carrots, peeled and chopped 1 onion, peeled and chopped smoked sausage Boil together until vegies are tender. Remove sausage. Mash vegies with hot milk and a bit of margarine. Serve with sausage. Variation: omit sausage. Mix 1lb ground beef with some bread crumbs, steak spice, egg, and worchestershire sauce. Make into 6 big meatballs. Brown meatballs. Add 1 cup water and one package gravy mix. Simmer until meatballs are done and serve over mashed vegies. This can also be made by boiling the potatoes with kale instead of carrots. Super yummy, very healthy, and cheap! |

I agree! This is sooo yummy! I added soy sauce to it. Everybody loved it! BTW, it's the lemon chicken on pg 44.
