BTW if you soak dried beans for four hours and then pour off the soaking water, you will get rid of most, if not all, of those hard-to-digest carbs that lead to gas. You just put them in fresh water for another few hours, depending on the type of bean!

Ha ha ha! We do the SAME thing with all kinds of beans! It's great! Just throw the dried beans (after washing them) in the crockpot, cover with water and cook for 3-4 hrs. on high! Very easy!

I grew up vegetarian, and we HAD to eat lots of beans for the protein! I like to soak then cook a whole bag of pinto beans in the crockpot.
I make refried beans with some... great for bean tacos.... here's my refried bean recipe- Heat In medium or large skillet over medium high heat on stovetop- 1/2 cup shortening / lard / olive oil 1/4 onion, chopped fine 2 cloves of garlic, chopped fine Mash into oil mixture (with a bean/potato masher or a large fork) - 3-4 cups cooked pinto beans (do not drain) Add to taste: salt pepper seasoned salt a squeeze of lime All done! Serve with cheese. I make a stew with some... chicken, chicken broth, whatever veggies are on hand... I just might throw some in a shephard's pie tomorrow... Heather

What a great thread. I get dried beans from WIC and have so many that I don't know what to do with!! lol I make baked beans with them, but needed some other ideas!! Thanks!!
Here's my Mom's baked bean recipe!! 1 lb baby lima beans ¼ lb bacon cut up 2 onions chopped 1 cup catsup 1 can tomato soup ½ soup can water 1 cup brown sugar 2 tsp salt dash of garlic powder Wash beans and soak until skins begin to curl (about 2 hours). Cover with fresh water, add a teaspoon of baking soda to the water. Cook on top of stove until beans are tender (about 45 minutes). Combine all remaining ingredients. Drain beans and add sauce. Bake in 350° for about 2 hours. Do not cook dry. |

I'm a vegetarian so I eat a lot of beans. I use them in place of meat in a lot of recipes.
Some meals I like are baked beans, bean burgers, tacos and burritos, bean casseroles, beans and rice, bean loaf etc. I also cook them in my crockpot sometimes. There are a couple of god bean cookbooks. I can't think of the names right now, but check your library. I use mainly canned beans and rinse them off really well first to get rid of the excess salt.
