Banana bread recipes, using Just Bananas! dried fruit?
I had a ton of Just Bananas! and Just Peaches! that have gotten a bit chewy. Anyone have any recipes for bread or muffins or info on how to substitute the dried fruit into regular recipes?

I haven't used the Just fruit things, so don't have a lot to offer, but I do have a recipe for "Church cake" that uses raisins in a spice cake that are boiled with a little sugar and water for a few minutes then left to sit and plump before adding into the dry ingredients. It comes out great, and the fruit is so moist. Have you tried adding a little boiling water to see what the consistency would be? You could maybe do this and then use like the regular mashed bananas if the results look promising. I think the peaches and bananas together would make an interesting bread.
