Need to help a friend with a first birthday cake recipe... many allergies!

Hey Mamas,

One of my local friends has a DS with allergies to egg whites, wheat, cow's milk, barley, soy, almonds and peanuts. It's his first birthday on Wednesday and she wants a cake for him. She's not really one in the kitchen so it has to be fairly easy to make... she's not crunchy at ALL so if you guys can sneak me sugar-free recipes that would be even more awesome!
Does anyone have a recipe that her DS can eat?? TIA!!

Hmmm...that is a hard one. My daughter is allergic to egg whites and finding a cake recipe was hard enough with just that. I am guessing someone may suggest using rice flour as a base? You other option is to see if there is an allergy free bakery in the area. That is how Hannah got her first "real" cake. Good luck!

I would search recipezaar.com, you can put in a search to omit any food allergies and it usually comes up with something. If that's a no go, post so on here and I'll see what I can come up with. We're all gluten (wheat, rye, barley, oat) free, my son and I are dairy free and my daughter is soy free..lol...so I'm an avid baker. There are also boxed mixes out there if she's not too kitchen savvy. A good place to check if you don't have a local store is Amazon. Good luck!

We live in the middle of NOWHERE. Wed don't have A bakery here, let alone a specialized one... to give you an idea, our closest Walmart is a 7+ hour drive away on a dirt-road with no streetlights and only one even SMALLER town halfway in between
So needless to say, it has to be made at home with ingredients that aren't specialty items. I'll pass her the websites and hope we come up with something. Thanks Mamas!

I have recipes for egg free/dairy free chocolate cake and spice cake let me get the recipes for you!

Chocolate Cake:
For a 9x13 pan:
3 c flour
2 c sugar
6 tbs dutch cocoa powder
2 tsp baking soda
1 tsp salt
12 tbs oil (olive oil works, but we prefer veg. oil)
2 tbs vinegar
2 tsp vanilla extract
2 c COLD water

What we do to cut down on mess is put the sifter straight into an ungreased baking pan and put the dry ingredients into the sifter and sift straight into the pan then shake it so it's semi even in the bottom of the pan. Make 3 holes (not all the way to the bottom of the pan) in the dry mixture, put your Oil in one, vanilla in one, and vinegar in the other. Start mixing with a fork while pouring in the water. Make sure it's very well mixed place into a pre-heated 350* oven for about 30 minutes. Check with a toothpick around 25 min. for done-ness.

For an 8x8 pan half the recipe and bake for about 25 min checking at about 20 min.

I'll be back with the spice cake recipe. My other forums arent' finding it today!

There are quite a few at www.godairyfree.org
Just search the recipes that list egg-free, soy-free, gluten free and nut-free (all in parentheses) since all the recipes are dairy free.

I didn't want to do wheat and such either, so I did a birthday "collage" for my baby instead of a cake, basically a rainbow made with her favorite foods. She loved it. I have a pic, but my pics are large and don't want to clog up your post. PM if you want to see.
