My dh uses this one but with a bit less beans. It's a good starting point though. Plus he chops up a HUGE amount of spinach and stirs it in at the end. Easy way for us to add our veggies in and you can't taste the spinach at all (if you don't like spinach). I eat this for everything, breakfast a lot of days, on a tortilla for lunch, plain in a bowl with some cheese... I love it!

I have a Lentil and Rice recipe

Lentil Tacos

* 3/4 cup dry lentils (brown ones)
* 3/4 cup dry brown rice
* 4 cups water
* 4 beef bouillon cubes (or chicken, vegetable)
* 4 teaspoons chili powder
* 1 teaspoon cumin
* 2 teaspoons onion powder
* 1/2 teaspoon garlic powder

Directions

Dump everything in a medium pot and boil. Turn down the heat to a little lower than medium and cook covered (just like rice) until done. I usually stir every 5-6 minutes, but you probably don't need to once the spices are mixed! Use just like regular taco filling.

Puerto Rican Beans (serve over white rice)

1 can Pink Beans rinsed and drained
1 8oz can Tomato Sauce
8oz Water
2T E.V. Olive Oil
2T Sofrito/Recaito
1 packet Sazon
1 chicken Bouillon cube
1tsp Dried Oregano
Adobo to taste

*you can sub pinto beans for pink beans, I do 2C cooked/frozen pinto rinsed & drained.
* I do add chopped onion & garlic to taste too, it's just not in the original recipe
*you can omit the chicken bouillon if you'd like, just add a bit of salt and pepper
*on the sofrito/recaito, I do 1T each, my mil does 2T recaito, but you can do whichever
