Chicken Pot Pie

I always keep a variety of "cream of..." soups so that i can make a quick crock pot meal. If all else fails, chicken in the crock pot w/any 'cream of...' and then on top of noodles or rice is yummy.

Here's one of my favorite recipes...

Chicken Pot Pie
*I don't know measurments for this, I just add whatever veggies I have to whatever chicken I have. I like boneless/skinless but you use whatever and just pull the skin off. It is sooo good and super easy*

chicken
1 can of cream of chicken soup
1 can of cream of mushroom soup
2 cans of water
add whatever veggies you like - a mixed bag of frozen veggies works well.

When the chicken is done break it up or debone if nec
mix in 1 more can of cream of mushroom soup (no water)

Very good on top of bisquits or phylo or in a pie crust

very forgiving recipe... use more or less of anything to taste. and I added a couple shakes of cumin. everyone loves this recipe whnever i make it.

Mexican Chicken Soup
4 boneless skinless chicken breasts left whole (about 2 pounds total)
1 15 oz. can of diced tomatoes with mild green chiles
1 15 oz. can of diced tomatoes
2 15 oz cans of black beans not drained
1 cup salsa
1 15 oz can of tomatoes sauce

Combine all ingredients in crock pot and cook on low for 8 hours.Take out chicken and chop up and put back in the pot.You can serve it with tortilla strips and cheddar cheese on top - but it is great by itself. Makes about 10 1 cup servings.

i have another awesome white chicken chili recipe i'll post when i type it up.

We love our crockpot, you can just about toss anything in it and it comes out great. My favorite thing to cook in it is brisket. Since we don't have a smoker this is the second best way to cook one.

Brisket (whatever size will fi in your crockpot)
Jar of Woody's cook-in sauce
bottle of liquid smoke
optional greek seasoning

You can salt or pepper the brisket first if you like it that way, I rub a little greek seasoning on it, it gives it a good flavor and some spiceyness (sp? lol) Add to crock pot, dump the jar of Woody's on top of the brisket. Add some liquid smoke, as much as you want (I usually use half the bottle). Cook on low for 8-9 hours. I always put it on before bedtime and let it cook overnight. It is will be fall apart tender and perfect for BBQ sandwiches.

I got this off another thread on this forum:

It's based on a recipe from the Super Baby Foods book:

5 cups water
2 cups any WHOLE grain - you can mix any to make up 2 cups: For example -
brown rice,
steel cut oats (not rolled oats or quick oats!!!!),
barley,
whole buckwheat (kasha), etc.
2 apples, peeled and chopped
1/2 cup raisins
1/4 tsp. cinnamon

Place all items in a crockpot and stir. Cook on low overnight (8-10 hrs.)

This makes a lot and is fast to make up! Probably 8 servings? Leftovers can go in the fridge and it microwaves well later.

Good served with a little milk/soymilk and sweetened with honey, brown sugar, or maple syrup.

Ooh, thanks. I"ve tried this with the oats, but I never thought of trying it with other grains. And I wanted some varirety.
