I got this recipe from Cooking Light and made it this weekend it was a hit. The second recipe also from Cooking light doesn't use mayo.
Gwen 4 cups small broccoli florets (about 1 1/2 pounds) 1 1/2 cups seedless green grapes, halved 1 cup chopped celery 1 cup raisins 1/4 cup salted sunflower seed kernels 1/3 cup light mayonnaise 1/4 cup plain fat-free yogurt 3 tablespoons sugar 1 tablespoon white vinegar Combine the first 5 ingredients in a large bowl. Combine mayonnaise and remaining ingredients, stirring with a whisk. Pour dressing over broccoli mixture, and toss well. Chill for 1 hour. Yield: 8 servings (serving size: about 1 cup) NUTRITION PER SERVING CALORIES 175(29% from fat); FAT 5.7g (sat 0.8g,mono 1.4g,poly 3g); PROTEIN 3.4g; CHOLESTEROL 4mg; CALCIUM 55mg; SODIUM 148mg; FIBER 3.5g; IRON 1.2mg; CARBOHYDRATE 31g "Most broccoli salads have a creamy dressing, but I came up with this recipe using oil and vinegar instead." -Paulette Kwiatkowski, Maumee, OH 4 cups broccoli florets (about 1 head) 1/4 cup thinly vertically sliced red onion 1/4 cup (1-inch-thick) slices red bell pepper 1/4 cup raisins 2 1/2 tablespoons sliced almonds, toasted 1/8 teaspoon salt 1/8 teaspoon freshly ground black pepper 1 center-cut bacon slice, cooked and crumbled (drained) 2 tablespoons white wine vinegar 2 tablespoons sugar 1 1/2 teaspoons olive oil Combine first 8 ingredients in a large bowl. The only salad I use broccoli in is this:
1/2 box tri-colored pasta 1-2 cups broccoli florets ( I used to cut the green part off the stem to ensure dd couldn't pick it out if she wanted to, but she loves broccoli esp in this salad, so now I just cut it small enough that she can eat it easily.) 1 cup carrot shreds (shredded with carrot peeler so easy for dd to chew) 1/2 cup olives sliced 1/4 cup red onion sliced (optional) 1/4 cup tiny (cherry?) tomatoes (optional) 1/2 cup bell peppers (red or orange to add a variety of colors to your salad) 1 bottle wishbone house italian dressing *all qantities are subject to change depending on your preference* SOOOO easy and yummy. . .
