Need a vegetarian recipe

I am vegetarian, and the rest of my family and extended family is not. I am actually mostly vegan, but struggle with a few things. Anyway, we always go to my dad's for xmas eve and have dinner there. My step mom is making pulled pork sandwiches, and she wants me to bring a side. I am looking for a versatile dish that can work as a side, but will be my main meal, so ideally have some sort of protein in it, like tofu or beans are something so it will fill me up. Any ideas?

My current favorite thing is a chickpea (garbanzo bean) salad. a drained can of chickpeas, tsp olive oil, tsp lemon juice, a little salt, and half a cup of Parmesan cheese. YUM.

If your making it for a bunch of meat eaters I would stay away from tofu, most meat eaters kringe (even though they havent tasted it) at the thought.

However a bean salad would be a good idea, something with pototes would also. Pasta salad with bunch of veggies and cheese (if you eat chese)
