MINESTRONE SOUP

3 tablespoons olive oil

1 large onion, finely chopped

3 Stalks of celery, finely chopped

2 large cloves garlic, minced or pressed

1 teaspoon dry basil

1/2 teaspoon each of dry rosemary, oregano leaves, and thyme leaves

1/4 cup pearl barley

2 medium-size Yukon Gold potatoes, diced
2-4 carrots (depending on how many you like) sliced
10-12 cups chicken or veggie broth
1 large turnip, peeled and diced

1 can (about 15 oz.) red kidney beans 

1 cup small shell macaroni or elbow macaroni

1 Zuchini diced
1/4 cup tomato pate

2 cups finely shredded green cabbage
 about of a small head
salt and pepper
shredded jack cheese



Heat oil in a 5-quart kettle over medium heat add onion, celery, garlic, basil, rosemary, oregano, and thyme. Cook, stirring, until onion is soft. Add barley, potatoes, carrots, and stock and bring to a boil over high heat. Cover, reduce heat, and simmer for 20 minutes. Add turnip. Cover and continue simmering for 20 more minutes. Mix beans and their liquid, macaroni, Zucchini, and tomato paste. Bring to a boil over high heat; cover, reduce heat, and boil gently until macaroni is tender (about 15 minutes). Add cabbage last 5 min. Season to taste with salt and pepper. Garnish with cheese over individual servings.


Makes ONE BIG POT!!! I would say 6+ adults I serve salad and bread with it

costco carries a frozen dinner that you just add water to and it feeds us two meals for $9 I cant remember the name I think it is birds eye brand? but it has veggies noodles and chicken in a garlic sauce yummmm!

Oh, I love this thread!

Homemade tostadas:

Corn Tortillas
Canola Oil
2 cans pinto beans
Cheese
shredded lettuce

1. Heat oil (will only need thin layer in pan) on stove top Fry up as many corn tortillas as you will need for your family. Or,you can bake these of course!

2. Empty pinto beans into a seperate pan on stovetop and heat through. If your brand of beans seems to have a lot of liquid, drain a little off the top. But you do want SOME liquid. Then mash beans with a potato masher. Add a handful of cheese to thicken. Then season with salt, and any seasonings you like. I add salt,cumin and garlic powder.

3. Top tortillas with beans, more cheese and lettuce. We eat these with sour cream and taco sauce. Enjoy!

Don't know if this has been posted yet but its my new favorite
3/4-1 box elbow macaroni ($1ish)
1 can cream of mushroom soup (.69)
shredded cheese (whatever kind you like) (1.50 on sale)
bit of milk
bit of butter/margarine
Cook and drain noodles
add soup, cheese (I do around 2 cups-add more or less depending on how much you like cheese ), about 1/4-1/3 cup milk-just enough to make it creamy, plus I add 1tbsp of margarine. Heat over low temp and stir until creamy. Its kind of like mac and cheese but the taste is a bit different. Season with salt and pepper if you want

Mexican Meatloaf

1.5-2lbs hamburger or turkey burger
2cups dry rice
1can cream of mushroom soup
1can cream of chicken soup
onion (however much you like)
cheddar cheese
tortilla chips (about half a bag)
sm can of green chilies
1c salsa

Preheat oven to 375
Brown hamburger w/onion. Season however you like.
Cook rice as directed
Add both cans of soup, salsa, and chilies to the rice.
Add meat to soup mixture
pour half the mixture into a 13x9 baking dish
top with tortilla chips and cheese
add the other half of the meat mix and top that with the chips and cheese
bake for about 35-40min or until cheese is golden.

**i usually use only about 1.5lbs of meat and it FILLS the dish

Okay I make this recipe when I need to bring a meal and everyone *** for the recipe.

Fry 1/2 -1 lb ground beef with a chopped onion. Add garlic, s/p Add french style green beans and the water plus 1 can. chop up potatoes with the skins, as many as you need to make it stretch. put lid on skillet. it will steam till potatoes are cooked. You can add some brown gravy mix in if you want. This is so awesome, cheap and yummy. Costs $2.50 when the prices are right and feeds a family. Please Pm me if you make it. I also send it with Caramel Dumplings for dessert. I like to make it with my tea bisquit recipe.
