Eggplant recipes?

I was given an eggplant to try and have no clue what to do with it. Generally speaking, I find veggies repulsive. Tell me what eggplant is like and share a recipe to convince to try it!

You can make eggplant parm. which is YUMMY!!! slice eggplant, and dip in flour and then in a egg, and fry till golden brown turning over each side.. then blot w/ paper towel, will get oil out,, layer in baking dish, put tom.sauce and mozz. cheese and make layers , and bake at 350 for 30 mins...yummy!!! it is not the healthiest with the frying, but once in a while it is a nice treat...

pasta, if you want a starch; salad, if you want something lighter

we love eggplant just cubed, tossed with olive oil, salt and pepper, and grilled. you could also broil it. we mix it with zucchini, red pepper, carrots, mushrooms in the grill/broiler ...

you could also cut it into slices and broil/grill it that way, then put them in sandwiches.
