I love the recipes from hillbilly housewife, they are inexpensive and taste delicious. I usually add whatever dried fruit that we have on hand. I love the brown sugar granola. I might have to add it to my Christmas morning breakfast menu. Here are the links:

It seems most of the recipes say to add the nuts AFTER the granola is baked, but I want the nuts baked into the granola so they are stuck with the oatmeal (thinking granola clusters here). Is there a reason you can't add the nuts before baking?

I always bake in any seeds or nuts...I wait on chocolate (for obvious reasons) & dried fruit (just b/c I don't really know what it will do).

Here's one I posted on my blog mayasmom23.blogspot.com
Yummy Old Fashioned Granola 1 tub of old fashioned oats 11/2 c. of brown sugar 1/2 c. of sugar 1 box of yellow cake mix 3 T. ground cinnamon (more if you like it cinnamony) 1/2 c. honey 3/4 c. maple syrup 1 stick of melted butter Mix all together until the oats become crumbly. You may have to add more honey to this if it seems alittle dry. Spread out evenly on cookie sheet. (you will do this a few times) and bake for 30-40 min. until lightly brown @ 350 degrees. Let cool. You can at this point add dried blueberries, craisins, coconut, pecans whatever really to the granola.....enjoy! |

I love, love, love this recipe. I've made it many, many times, and it's only failed me once. I decided to add a little bit of honey instead of the usual brown sugar that I typically make it with, and when I did, the granola stuck to the pan in places. It's never stuck to the pan before. I will never ever use honey in it again.
http://alladither.typepad.com/halfas...e-granola.html This is so delicious. 3-1/2 cups old fashioned oats 1 cup whole almonds, unsalted 1 cup coconut, unsweetened (optional) 3 Tablespoons flax seeds, sesame seeds or sunflower seeds 1 cup dried fruit (optional) 1 teaspoons sea salt 1/4 cup brown sugar or honey 1/4 cup canola oil 1 Tablespoon vanilla 1 Tablespoon cinnamon Preheat oven to 350 degrees. Mix all ingredients in a large bowl. Spread onto cookie sheet with edges or large baking dish. Bake for 10 minutes. Stir. Bake for 10 more minutes. Serve with yogurt or cold milk. Also great by the handful.
