I spent around $8 on a salad and it fed me for two lunches and our family of four for one dinner. I couldn't believe it. I asked the hubby what kind of meat he would like (turkey, chicken, steak) on his salad and if he wouldn't mind having salad for dinner one night. He said it'd be great and we didn't need meat, just boiled eggs. So here goes the ingredients: (I put each ingredient in it's own tupperware, so we got to make our custom salad whenever and however we wanted for days!)
1 Head of lettuce- $1
1 can of garbanzo beans - $1
1 can of shredded beats - $1
4 oz of cheddar cheese - $1
6 boiled eggs - $ .60
Broken up Ritz cracker as croutons as needed - $ .40
2 cans of tuna - $1
(I buy everything on sale and stock up which may be why some things are really cheap)
I make my own salad dressing w/ peanut oil, garlic, spices, vinegar - $1
My hubby likes ranch - $1

My kids don't like salad so they got the egg crumbles, cheddar cheese, garbanzo beans and Ritz crackers for dinner and were happy.
It's like the never ending salad! After all of that, I still have enough for lunch tomorrow,then it should be gone!
I wanted to share this b/c I was amazed at how cheap and filling our salad night turned!! And healthy.

Might be a little over 5.00 but we had pasta jambalaya last night and it was really good!

1/2 onion
1/2 bell pepper
Turkey Keilbasa
1 can black beans drained and rinsed
1 can diced tomatoes w/green chillies
1-2 cloves garlic
3 cups dry penne pasta cooked
1 tsp cajun seasoning

chop garlic, dice onion and bell peppers, chunk up keilbassa, (I do it in rounds cut in 1/4's)

Add a bit of oil to a deep sided skillet and heat over medium high, add garlic, onions, and bell pepper sautee 4-5 minutes. Add cajun seasoning and Keilbassa saute 1-2 more minutes. Add in tomatoes and black beans bring to a boil and simmer for 10 minutes. Mix with cooked pasta and serve, top with shredded cheese if desired

I made this last night for dinner and it was so good! DD ate a TON and she never eats much of anything. I didn't have pork on hand, so I used some beef sirloin that I got really cheap. Also didn't have wild rice mix, so I used a plain herb flavored mix. It's one of those dishes I think you could use just about any type of meat and it'd be good.

Oh, and it only took me about 20 minutes to throw it together! It's definitely a keeper here!

Lazy Day Cabbage Rolls

1 head green cabbage
1 lb ground beef
1 med onion, chopped
3/4 c uncooked rice
1 can stewed tomatoes
1 can tomato soup
2 c water
1/8-1/4 tsp each of salt, pepper, oregano, onion powder, and garlic powder

1. Chop half of cabbage and cut other half into thin wedges.
2. Brown ground beef and onion; drain. Add rice, tomato soup, stewed tomatoes, water, chopped cabbage, and spices. Mix well; Pour into cassarole dish.
3. Place cabbage wedges on top. Cover and bake at 350 until cabbage is tender and rice is cooked (40min-1hr).

I'm still reading through this thread, but LOVE all the great meal ideas.

One of my fave cheap meals is chop meat & water gravy (my dad calls it boot soup)
*Saute 1 green pepper, 1 onion, some minced garlic (to taste), and a can of mushrooms (optional) in EVO until soft.
*In another pan cook 1 lb ground beef. with some spices. I use some parsley, oregano, garlic powder. Drain off fat. Then mix in with the green pepper/onion mixture.
*Add 2 cans of beef broth and allow to cook on med heat for like an hour.
*Serve over elbow noodles

An easy, quick, and cheap lunch are deli wheels.
*Mix together some cream cheese w/ chopped up green olives.
*Spread mixture over flour tortillas
*Place deli meat (ham/turkey) over mixture
*Roll tortilla over like a burrito and place in fridge to chill for 5 mins
*Take it out and cut into spiral slices

lol. this reminds me of when my stepdad was out of town and my mom didn't feel like cooking so we would have diet coke and pretzels for dinner. thats cheap right?
