Eggs, lovely eggs!

We've had a lot of rain recently (seems typical for spring down here). That means lots of muddy chicken feet, so I had to rinse off my eggs. I try not to unless I absolutely have to, and when I do I make sure they are used up quickly. I took a picture tonight after I got done rinsing them off. I love the huge variety of colors that we get since we have so many different breeds. My new Ameraucanas lay the prettiest blue eggs. My other Ameraucana and my Ameraucana mixes lay olive eggs. I normally also have some really light brown ones, but not in this batch. This is two days worth of eggs for us.

very nice! we have had to rinse/wipe ours off lately too, they walk through the muddy poopy water and it gets all over the eggs!

They have a protective layer that keeps germs out. I think. I wash mine anyway because we use them fairly quickly since we only have seven chickens. It seems like everytime I cook I use them all. Isn't it lovely though to be whipping up a recipe and just go grab fresh eggs? Ours look like the above picture also, although we only have one easter egger.

Because fresh eggs have a natural antibacterial layer on them, called the bloom. As long as you don't wash it off (scrub heavily, use soap, use hot water, etc) the egg will last a long time (6+ months if in the fridge!). That way, you can store them on your counter in a bowl, rather in the fridge. That's how chicks can hatch after 2+ months without becoming rotten. I wouldn't be surprised in the eggs you buy from the store are upwards of one year old.

ETA - I do wash them with soap immediately before I use them.
