This week is all about refilling the freezer. my beef quarter and 12 whole chickens both came in. I still have 4 whole chickens from past years to use up. And than I over spent on groceries while I was at it.

I want to introduce you folks to a "goulash".

There are lots of recipes around for goulash. In my family goulash is a stew of a few certain things, plus whatever is around, and it's a great way to get rid of pantry items, veggies, and meats.

In order to make it goulash, and not something g else, you need the following:

The Cajun holy Trinity: onions, peppers, and celery.

Tinned tomato of some kind. I've used steamed, tomato sauce, and diced. Whatever.

The cajun spices or a Cajun spice mix: salt, pepper, garlic, onion powder, peprika, red pepper, basil, thyme, oregano.

So you take these base items, you throw whatever you have around in a pot with it with some stock, and Bam. Dinner and you have used up some of your stuff.

Traditionally goulash is beef, but rules are a farce and I do what I want.

I'm making some tomorrow I think to get rid of a bunch of things. Serve it up with cornbread

I hardly every buy anything processed ever. I have a farm and raise all my own meat and have a bit of a garden. I also can a lot. Where we are there are tons of places to forage for wild plums, elderberries, thornberries, huckleberries, chokecherries and other things that I make jams and jellies out of. This year I have canned 50 lb of peaches with honey instead of sugar and also pears, tomatoes, pickled zucchini and today I am doing pickled green pear tomatoes, pear with ginger jelly and plum/blackberry jelly and pressure canned beans. My husband got me a new pressure canner so I am going to can some meat rabbits that I raise, deer meat, and more canned dry beans (easy to do in the pressure cooker and available when you want them for fast meals).
