My Mood:
What fresh fruits and veggies can I freeze?

I want to start freezer cooking my meals in advance. I am wondering what fruits and veggies I can freeze, either cooked or raw.
Specifically:
raw, peeled and sliced potatoes
carrotts

Potatoes you can freeze raw. Just peel, cut to what size you want, rinse with water, and freeze (if you are cutting in small pieces, lay them out on a baking sheet first and freeze, then once frozen, put in a ziploc bag so they don't freeze as a big clump). You can also bake them, wrap in foil, put in a zip bag and freeze.

For me, I don't have luck freezing raw carrots. They thaw and are spongy in texture. You can cook them or par-cook and freeze though.

You can really freeze anything...small things like berries, corn, peas, cut up bell peppers, etc...do the baking sheet method first.

The only thing I haven't had luck with are citrus fruits and tomatoes.

I'm not incompetent. Autocorrect is. Sent from my iPad.
