Christmas Morning Breakfast

I'm looking for something that's either make-ahead or easy to make for Christmas morning. My mom always used to make cinnamon rolls, which were great, but there are sooooo many sweets around the holidays that I would like to keep the sweets to a good quality chocolate bar in Christmas stockings and a batch or two of Christmas cookies.

What do you make?

make it the night before and then plop it in the oven while we are opening gifts

Yes, some time of egg casserole would provide some much needed protein (and healthiness lol) in the midst of all the Christmas treats.

Re: Christmas Morning Breakfast

I just did some experimenting with egg casseroles and we tried this:

1-bag of shredded hashbrown potatoes thawed frozen or the kind in the dairy section.

1lb-cooked and crumbled bacon or bulk sausage or ham(you get the idea)

9-12 eggs beaten with 1 cup-cream or 1/2 &1/2

1 8oz block of sharp cheddar

salt and pepper to taste( I used a bit directly on the potato layer and some in the eggs.

Layer the hashbrowns in the bottom of greased casserole(smoosh them down), then layer the meat of choice, pour eggs over, sprinkle with cheese, and bake about 1 hour in 325 degree oven.

Very quick easy and yummy. Easy to change up by adding peppers and onions or mushrooms. Ham and Swiss etc.

We have cinnamon rolls . But we also have an egg casserole, bacon, and baked cinnamon grapefruit. There's something for everyone whether they want sweet, savory, or healthier.

We are having homemade cinnamon rolls. I made them yesterday and will pull them out on Christmas eve to thaw.
