I don't see why not. Just make sure you adjust other forms of moisture accordingly so they're not too goopy

I have tried box of cake mix baked into muffins and topped with whipped cream and sliced bananas and also have mixed sliced bananas in with other fruit, fresh or canned with a scoop of ice cream and served after dinner.

Those frozen bananas work well in any baking recipe, not just smoothies. It isn't a new thing for you to make, but it does expand the uses of your freezer stash. I have used frozen bananas in banana bread, muffins, and no-bake breakfast bars.

Banana Pancakes!

1 Large ripe banana.
2 Eggs.
Peel the banana, put in a bowl, take a fork and do violence upon the banana (BAD banana! BAD!) until it has given up and submitted to your will (oh, the things I write to pad this so the collapse bot won’t eat a two sentence recipe!).

Remove the shells of the eggs in whatever way seems best to you… and similarly fork ’em in with the banana until you have a nice batter.

Now, heat a pan. Dab of butter or oil to keep your banana pancakes from sticking, or invest in a nice non stick pan.

Cook until the edges look dry, and flip… poke ’em with your finger to tell when the innards are firmed up and cooked.

Plate. Butter. Syrup. Eat! Make contented noises…

I have, occasionally, cheated and added a tablespoon of flour to firm up the slightly fragile pancakes, or account for a particularly ‘wet’ dough made by an over-ripe banana.

Won’t replace traditional pancakes, but darn tasty!
