english muffins question (slow rise)

I have been experimenting with homemade breads lately, and would love to try this recipe for english muffins! Here's the thing: I WOH and have a 1-1/2 YO. See how it's mix, rise, rise, cut, rise, bake? That's kind of a problem.
I was thinking that I could make the dough and do the first two rises one night. Then cut, put them out on a baking sheet, and pop the mess into the fridge for a very long slow third rise. Then, the next day (presumably sat or sun when DD is napping) I will bake them. Do you think that would work? A little bit of sour-ness or whatever in the finished product will not be an issue (will sell to DH as "sourdough english muffins"). WWYD?

i'm not sure....because i have the same issue you do with woh and trying to make bread/rolls. regular bread i just use the delay timer on my breadmaker. but rolls or english muffins are tricky. i've tried repeatedly to do the whole "2nd rise in the frig all day while i'm at work" thing. and it has yet to work. they just don't rise. and if i want something for dinner, i don't want to wait an hour for them to warm up, rise, and then another 45 minutes or whatever to bake.

so basically, i'm just answering so i can bump this to the top and maybe we can both get some ideas
